Fruit salad hair

Can I have a do-over? Today has been one of those days. Lol I am so ready for this cooler weather to go away.  No, I don’t like the summer weather either.  My perfect temp would be around 70-ish.

Yesterday, I decided that I wanted to start trying a home remedy for my hair.  With all the stress that we have been under, my hair has started to thin right in the front. This is just very traumatic for me. I have always had long, thick, beautiful hair. Well, it is still pretty, but just thinning. Yeah, I think I want to go cry right now.  Only my hubby can be the bald one in the family.  Bless him, he doesn’t need to worry about stress making him lose his hair because  – he doesn’t have any!! Lol  That’s ok, bald is sexy on him. So, I melted a little coconut oil and applied it to my hair and was very generous to the scalp where the hair thinning is at.  I then wrapped it up with saran wrap and placed a warm towel over the wrap.  I left it for about 45 minutes before heading back to the shower area. I hung my head over and took a cup of apple cider vinegar and applied that, then wrapped it again. I left it for about 15 minutes. The smell was enough and I headed off to wash it OUT!!  When the hot water hit both, I smelled like a fruit salad – and not a good one!!  But oh my gawsh, my hair has never been so soft.  Today, it feels really good.  I read somewhere that I would need to do this twice a week and for a while to see the growth come back.  I don’t know if son will be able to handle this.  Of course, hubby was NOT here.  Heck no, I am not going to let him see or smell me like that. Hehehe

Our temperature was just bad last night. I know, a lot are probably dealing with snow – and I feel for you, I really do.  We got down to 39 last night.  I decided, since I stay at home and take care of son, that I would “sleep” in one of our new chairs (ouch) and keep the heater on all night.  I knew that I would not sleep really good, which is what I wanted.  It was my way of waking up every 2 hours for at least 30 minutes to make sure that we were all safe.  I wanted son to stay warm all night, so I left him on his bed and hubby was in our bedroom.  I did not send son into the bedroom because it gets cold during the night. The bedroom is not near where the heater is plugged up at. Son is so darn sweet.  I had my head leaned over onto his bed and he woke up around 4am and planted a big ole kiss on my head. I love that little man.  He woke up at 730 for the morning and I traded spots. I got a little sleep until I heard, “Mom, I am HONGRY!” lol  Needless to say, I am very tired today.  It is going to be about 10 degrees warmer outside, so I should be able to keep the heater off tonight and sleep in my bed. Lol

So whats up today with me? Well, I was cooking our fish for our lunch and the flipping pan I was cooking it in flew off the stove.  I was about to put the second batch into it to cook when it happened. I did not bump it and hubby saw it happen.  I just knew it was going to land on my bare feet.  Hubby was getting ready for work, so I guess he needs to go out and check the camper tomorrow and see if it is level. UGH!  Luckily, there was no fish in it and the carpet only minimally melted where the pan landed.  I guess that just means that I need to go sit down and prop my feet up for the rest of the day.

Aldi ambulance

Today has been a tough day.  We had to run over to Aldi to pick up a few items that were needed (we ran out of) for our Dr Phil 20/20 diet.  Hubby woke up late.  I was up early watching Howard the Duck with son.  When hubby got up, he had his breakfast and cup of coffee and then we took off to Aldi.


Normally Aldi is uneventful.  While in there, son was badgering me with what we were going to have for lunch and why we couldn’t have pizza, etc.  So, I looked at him and said, “Son, come on, just hush for a few.”  This lady that had her bike helmet on kinda snickered when I said it. It wasn’t a normal snicker, but a snicker none the less.

We got all the way over to the other side of the store where the frozen foods were at.  I needed to get fish and a few veggies that were over there.  When I am in the store, I am just totally oblivious to others around me.  All of a sudden we hear a crash and I look over and the woman who had snickered had fallen and hit the base of her head/neck on the cart. Hubby walked over and asked if he could help her up and it was at this time that he noticed she was having a seizure.  He made sure she was on her side and backed up.  He told someone that worked there that they needed to call an ambulance.  An employee came to her aid and flipped her on her back.  Another customer passed by and placed this woman back on her side and told them not to move her until the ambulance arrived.

Of course, son wanted to stand there and take in everything that was going on.  We knew that the employees were going to handle the situation, so we moved to the check out and paid for our groceries.  When we got back in the truck, I took the opportunity to inform son that he should never stare at what is going on in situations like this. It is something that I have told him before, but since he had never experienced anything like this before – human nature took over.  Please, if you have never had a talk like this with your children, grand children, nieces, nephews – PLEASE do it now.  The last thing that someone who is having a medical emergency wants is for people staring at them.

I heard the manager tell another employee that they should move the lady to another point of the store.  I cringed.  Now we know why she was wearing a protective helmet in the store.  The other customer who had told them NOT to move her was asking if she was a regular, had a history of seizures, if she had a husband, etc.  This poor woman was by herself. Usually her husband is with.  She also has a history of seizures, which means she shouldn’t have been on her own. The EMTs were walking in as we were walking out.

This really made the start of our day kinda odd.  I pray that this lady is not severely hurt.  She was not able to talk when I was there, but showed signs of wanting to sit up.  So, anything interesting happen during your day?  Thank you for reading!!

Waist is a shrinking and tushy is more comfy

My oh my. I have had a headache for a few days.  I am sure it is because I am purging some yucky stuff from my body.  Namely, sugar and salt.  This is day 3 on the Dr. Phil 20/20 diet.  I am not completely crazy about the recipes.  I think it is because most of them have mustard in it.  I am not anti-mustard.  But with every meal – its just overkill.  I would love to figure out if I can substitute mustard for something else that is similar in nutritional values.

I was very surprised yesterday when I made our lunch.  I made, from the diet, cod cakes.  A lot of people do not care for fish, much less cod.  Luckily we are a family that likes all types of fish.  It called for us to cook lentils and mash them then mix the cod along with mustard, garlic, lemon juice, water, rye crackers and spinach.  I mashed those little lentils until they couldn’t be mashed any more.  I then took the cooked cod and flaked it, ok mashed it and added it to my other ingredients.  I took my hands and just squished and squished until it was well mixed.  I formed them into little “cakes” and baked, turning them once.

Imagine my surprise when I placed them in front of son and he told me that he liked them.  I really was not expecting this from him.  I was expecting him to fight, argue, complain – you know, all the typical 11 yr old things.  But I didn’t get any of those.

One thing I noticed yesterday on this new way of eating is that we were all HUNGRY!!  I do hope that this is only because we are so new into the diet plan.  We drank extra water, had a few walnuts and just nothing helped.  We were perpetually HONGRY!!

Today has been ok.  We had a scramble egg spinach breakfast.  There was no salt used in it at all, but it tasted like there was.  The trick is to use a little lemon juice.  We had egg salad on rye crackers for lunch with apple.   This has been one that is ok, but it just uses too much mustard for my taste.  Ok, just the sound of eggs and mustard together is ODD, but its not totally gross.

We also were very blessed over the weekend.  I tell you, neighbors in a campground are nothing like neighbors when you live in an apartment or home.  So, our neighbor on the other side of us is a single woman.  She has lived here for almost 2 years. Just the sweetest. She has two dogs that son loves to play with when they come outside.  They are the cutest lil doggies.  Well, she told us that she had a storage unit that she had to clear out.  She was bringing her recliner and was getting rid of her two chairs that were at the back of her fifth-wheel.  Hers is almost 10 feet longer than ours and has slide outs on both sides.  We walked into it and I was immediately jealous of all the room. Lol

She needed to do something with the chairs that were in the way of where she wanted her recliner to go.  She asked us if we wanted them.  Ummmm, let me think about it.  So, we have this one swivel chair that came with our camper way back when.  The bottom of the chair is not comfy and is starting to fall through.  I always put a pillow on the seat when I sat down to make it more comfy.  When hubby is home, I would let him have that chair and I brought in a folding lawn chair that I would sit in.  The lawn chair is really not that bad. So she has offered us these two chairs where there is no bottom falling out and has hardly been sat in.  She has cats and they have scratched them up pretty bad, but still – it aint no lawn chair and bottom falling chair!!  So, do we want these two chairs?  I’m sorry Ms. Neighbor, but we do not have the money to purchase them right now.  She responded with, “No, I do not want money for them.  I am giving them to you if you want them.  If not, I am just going to throw them away.”  WHAT?!?!?!  Oh yeah, we want the chairs.  It is a little more congested in here now, but our tushies are comfy.  Well, all except them not having arm rest on them.  We picked the perfect place to park our camper.  We could have done much worse for our neighbors.

Oh, and I almost forgot. I know I said we are on day 3, but out of curiosity this morning I wondered how well we were doing.  We do not have a scale here. Just no room for it. We go to the grocery store and weigh ourselves on their big scales at the entrance.  Hey, I have seen people weigh their luggage on these before. Lol  Nope, we haven’t gone and weighed ourselves.  We had to take our measurements before we started.  I put the measuring tape around my waist and I am down 1.5 inches already.  Hubby – he is down 1 inch.  Score!!! It seems to be working.

Breaking wind!

The sun has finally came out today.  From what the weather man was telling last night – it was going to be near evening time before the rain would go away.  I absolutely hate bad weather.  It has become worse since we have moved into our “condo”.  We have known that we need a new roof.  UGH!!  One price we were quoted was about $5000. Its just not worth it.  If we go to resell our condo, we would never recoup that amount of money. SIGH!  So, knowing that we are in our drier season, we have become very lazy about our roof.  Well, today we noticed that we have a leak – right above our heads – in the bedroom.  NO!  We were not in there when it started to leak.  We caught it right as it was starting and put things in place to catch water.

Let me back up a little. We knew last night that the weather would be bad.  I went out yesterday to call son inside from playing and noticed my neighbor outside doing things in her yard. I went over to talk with her for a second and noticed that she was securing all the small items in her yard.  When I asked her about it, she looked at me and said, “News is stating that we are going to get 160 mph winds.” Ummm, ok crazy lady.  Figuring that it was going to get bad, I decided to secure some of the things around our yard too.  I came inside and never saw anything about 160 mph winds.

So son and I had dinner later in the evening and sat down to watch American Idol.  Last season – we gotta see it.  As soon as it goes off, they give a teaser that coming up in the weather section of news – they have information about a huge storm coming our way – stay tuned!! Ok, I am watching!  Whats going on with our freaky weather.  From what they told us, its all part of El Nino.  I was so flipping amazed that I had to take a picture of the TV.


Yup, that says 160 MPH winds.  Wait!!  WHUAAT?  So, my neighbor isn’t crazy or smoking something.  It really said it.  The bad weather was supposed to start rolling in around 6am, which it did.  I was laying in bed at 8am, awake and listening.  I could hear the rain hitting the top of the condo and the wind was swirling all around.  But it was nowhere NEAR hurricane strength winds. From what the news stated, the rain would be very heavy – and it was.  They said that the 160 mph winds were in the upper level heading toward north Florida and Georgia.  Whew!  However, we were advised that our winds would gust and reach up to 40 MPH. We were also told that there could be possible tornados.  I can report that I do not think the winds got near 40, but it did throw caution at us and made us think about the safety of our condo during bad weather.  We now have a plan in place and will use it if we are ever faced with bad weather.  Of course – my plan:  bad weather is coming so the Perpetual Camping Family is heading to a hotel. Lol  Would have been at one last night if we would have had the money.  Like I said, I have never liked bad weather and this condo makes me like it even less.

In the rain, we did take our truck across the road and hit up our local Aldi for the groceries we will need to start our diet.  I sat down this week and put together my shopping list.  I also put together my menu for each day.  We will need to eat at specific times, so I needed to plan our meals so that I can send things to work with hubby that may be easy to keep in his lunchbox.  We came back with our items and I put them all up.  For lunch, I used my new oven and made baked chicken breast sprinkled with curry and an arugula salad on the side.  Theres a party in my tummy, so yummy, so yummy! Lol

I’m hot and I’m cold…..

Today is a new day.  But lunch was the same. Lol  Yup, we had the rest of our turkey loaf.  I put it in our little convection oven.  Once again, it came out moist.  We are so happy with our little oven.  We did our measurements this morning and OH MY GAWSH!!!  We gotta lose some weight. Lol  I am also working on our menu for when we start in a few days.  Dr Phil 20/20 diet seems to be a great weight loss tool and I am seeing people on FB with huge success.

Ok, it is official – I am TIRED of this weather.  I had this little “condo” so warm last night.  It felt so nice.  It was down to 43 last night.  Of course, when hubby got home around 11pm, he said, “Why is it so hot in here?”  Ok, just take your hot rear right on back outside and sit for a bit! Lol  Son and I will stay right here where we are comfy.  The high today is 62, but it feels so warm in here.  I am sitting here in shorts, tank top and socks and I am a little hot.  The door is wide open, but the air and heater are both off.  That’s the best about living in this little “condo”, we can sit here and let the fresh air in and have it feel really nice.  However, tonight I will have that little heater going again. Which brings me to the scratchy throat I had this morning when I woke up.  That’s all part of the winter weather here in Florida. Lol  But, throat relief tea will help with this.

Well, good luck to all who are playing the Powerball Lottery tonight.  It would be nice to win something that could help us with this financial situation we are in. Just so you know – I am NOT holding my breath for that win. Lol  It would be nice if we did win though, I would definitely be able to start that non-profit to help single moms that I have wanted to start.  It would also be nice to be able to get the brakes fixed on the truck and get me a car.  Oh, and have our flipping phones turned back on.



Well, I have got to get son off the playground and started on school.  I am trying to let him go out when the other kids are in school so that he go and play without the bad antics that these kids pull.  Always drama with them.  I know that son needs the exercise and needs to wear down his energy too. Plus, if it stays warm like this, I might actually be able to get into our small bathroom and shave my legs that has turned into a forest I think. lol

Turkey 911

What a day, what a day!!  I thought the day was going to be really good.  First of all, I received a package at our office.  I knew that my friend Marlene was sending me a package and was expecting it today.  OH MY GOSH – she got me a Black and Decker Convection/Toaster oven!!  What the what???  Really??  YES!!  Now I can bake things without worry.   I am so excited to try it out.  So what will my first dish be? Hey, I’m starting to wonder if my friends are secretly trying to keep me cooking!!  A new cookbook and a new convection oven!!  I am feeling the love girls.

Well, I did put out ground turkey to thaw this morning.  You all know that while hubby is working, I am making dinner for lunch and lunch for dinner.  I wanted bake.  I love to bake my food.  Baking is fun!!  I took out half of an onion and chopped it up.  Then I took out the rest of the ingredients I needed and mixed them with the ground turkey and made a small turkey meatloaf.  I have the other half, mixed, in the fridge for either dinner tonight or lunch tomorrow.

My observations with my new little oven:  The meatloaf cooked in an hour.  It also was extremely moist, which I was scared it wouldn’t be.  It also did not produce any liquids as it cooked – which is probably why it was moist.  Yes, it did heat up the home.  But that is ok.  Our turkey loaf was extremely good.  This little oven is going to come in very handy with our diet we are starting in a few days. I just need to research it and  see if I can use my Pyrex dishes in it.  I am sure I can, I just want to make sure first.


We got a knock on our little “condo” door today. I went to the door and the guy asked for my hubby.  We walked outside to see what this guy wanted.  He was here from our auto insurance company.  When we turned the car back into the bank, we knew we would receive some sort of phone call or something the bank.  Well, the bank called our insurance company to file a claim regarding the damage to the trunk where we were rear ended the same day as dads funeral. We did file a claim with the insurance company of the person who hit us from behind. We did receive a payout for the car since it was technically totaled.  The car was still drivable, so we decided to take the money and get our car note caught up at that time and go buy a truck to pull our camper.  We really do need the truck since our car would no way pull the darn thing.

So the bank is now trying to get our insurance to pay for damages to the car and has even went as far as to say we keyed the car before we left.  Ummmm, excuse me?!?!  I took pictures before we left that day and showed them to the insurance guy.  They are going to try everything possible to get the money for the damages PLUS the life of the loan from us.  I just don’t know what they can possibly do since we received money for the car from the other insurance agency.  All I know is that they cannot squeeze blood from a turnip!

After hubby made a few phone calls, he got ready for work.  Son took his bike to the playground to play for a little bit before we did school.  We have the door wide open and I heard a scream. Of course, momma bear came out!! Hubby was like, “How did you hear that?  I didn’t even hear it.”  Man, that’s cause you are not a mom. Lol  This ole mom walked outside and my little drama king was halfway home, saw me and screamed, “CALL 911!” Of course, I asked why. “BECAUSE, I WRECKED MY BIKE. I FELL AND I’M BLEEDING!!”  I can see that he did in-fact scrape his knee.  But it does not require 911 or going to the ER.  I brought him in and cleaned it up.  Boy is he playing it hard now.  “oohhhh, my knee…..”  Yeah,  he is an actor alright.

Hubby left out and said he would call me on the way to work.  I sat and waited, and waited and waited.  Then I picked up my phone and tried to call him and discovered that our phones have been turned off. The phone company did it.  Drats!!  And the Perpetual Campers go quiet!  Well, except for the internet.  At least we still have it. Lol

The Perpetual Campers


We are in cooler weather today!!  I was finally able to plug in our little cooler and see just how well, or not, it would work.  Oh my, it got toasty in here last night.  Of course, I did not let it run while we were asleep.  I know it has a safety feature on it to where if it tips over, it will turn off.  But, just but, what about those times where fires start not by tipping over, but by the wiring?  I know. I know. It is a new unit. The wiring should be good to go.  Oh gosh, I am a worry-wart type of mom. Lol  Just want to keep my guys safe.  We woke up this morning and it was 45 outside. I turned on our little heater full blast and it took about 1.5 hours for it to make it toasty again.  Yup, we were all huddled up under blankets with coffee until then. lol

I am having a very rough day today.  My dad has been on my mind a lot.  On the 14th, it will be 5 months.  I keep thinking it is all a bad dream or a cruel trick someone is playing on me.  I really want to think he is still alive, but I know he is not.  What makes it so much worse is the way most of his family has and still treat me – or lack of treating me.  Its like I am not my dads child.  I am the forgettable one, the one who is not wanted, needed or loved.  It’s a really tough pill to swallow, especially growing up and thinking that your part of the “in crowd”.  Some days are not as bad as others.  Today has been one of the more rough days that I have been through. I am trying to do things that will keep me  on a more even temperament.  One is by writing this blog.  The other is by keeping busy – like cleaning this messy condo.  I will also try to get my boy to play games with me later, maybe Yahtzee or Clue.  Then it is on to cooking our lunch for dinner.

Speaking of dinner, last night (since hubby was home) we had pasta, carbonara sauce and diced chicken breast.  It was yummo.  I also made pumpkin cornbread that I found at Aldi for $0.30.  We found that they had some really great deals on foods that were seasonal specific to Thanksgiving and Christmas.  We had picked up one of these pumpkin cornbread mixes and since we are starting our Dr Phil 20/20 diet soon, we wanted to go ahead and eat some of these things.  Last night I made the pumpkin cornbread in the crockpot to go with our meal.  I didn’t know what to expect with it.  I was thinking that it was going to have a huge sweet taste, but it was more savory than sweet.  The cornbread came out perfect and looked awesome.  Today, we have had some of it with our lunch and it was still super moist.

Breaking the brake

Hubby is going to be making phone calls over the next few days to see what he can find out with the brakes for our truck.  We got up and found that the rear drivers tire was off the truck and laying on the ground.  Our sweet neighbor came over and started working on our truck.  We so don’t have the money to pay for any parts right now, but bless him – he wanted to help us out.  From what I understand, he is a very well known race car driver from Canada.  But for the life of me – I have no idea what his name is. Lol  I know the first name he gave us, but I don’t know if that is the name he goes by when he raced.  Of course, he is retired now.  But how sweet of him to try to fix our truck.

Yes – I said TRY!!  Wouldn’t you know it, he is not able to do so.  He told hubby and me this morning that it would be better for us to have someone repair it that has a warranty on their parts, etc.  The reasoning is because the brakes that are on the truck are specialized.  Yup, that’s right, SPECIALIZED.  It just keeps getting better.  He told us that the company we talked to yesterday wouldn’t be able to give us a quote because of the type of brakes that is on it.  So basically, this means more money that we are going to need to spend to get it fixed.

Ok, on another note – has anyone watched the show “My 600 lb life”?  It comes on TLC.  I have watched past seasons and am very excited to see that it is back on.  I am very sensitive to people who are morbidly obese.  My heart just goes out to them.  I have lost 85 lbs over the past 4 years.  I am at a stand-still right now, but I do plan on jump starting my loss again.  I have a lot more to lose.  I want to be healthy, not only for me but for son.  He is working at being an actor.  I do not want him to be embarrassed by the size of his mom.  He tells me all the time that he loves me the way I am, and I know that he does, but he has yet to be around really cruel people who will say mean things about me.  I was nowhere NEAR the weight that the people on the show are.  Nor will I be.  I watch this show as a motivator to me to do what I need to do to drop the weight.  But my gosh, I don’t know if it is the way they edit it – I just ache for these people.  Some of them just want the easy way to try lose weight.  They don’t want to walk.  One woman wouldn’t get out of bed for 5 months after having bariatric surgery.  Oh my gosh!!  Why go through it if you are not going to put the work into it?

Hubby and I have decided (and I know I have said it before) to do the Dr Phil 20/20 diet.  Some of the things require baking, which is going to be interesting since I do not use my oven.  I don’t know if I am going to need to get a convection oven or just continue to use the crockpot.  These are some of the types of issues I come across while living in a condo on wheels.    Yesterday for our dinner-for-lunch, we had soft tacos.  I took the remaining stew meat I had not used in the stew and sliced it thin.  Put it over into a skillet and browned it with onions. Then I put taco seasoning in it.  Once it was done, we put it into soft tortillas with shredded cheese and a little sour cream.  It turned out to be very yummy.  Wish I would have gotten a picture of it. Lol  Today, I am doing something with ground turkey.  Need to run, gotta make lunch aka dinner!

5.5 hrs to cook wings? Are you serious?!?!

Good day everyone!  I say day because I do not know what time of the day it is from where you are reading!  My oh my, my lil blog was busy yesterday.  I now have more followers and I cant thank you all enough for reading my rambling thoughts.  It really does make me feel appreciated and like my voice (ok, typing) matters!  So, to all my followers and “stalkers” – THANK YOU!!!  You all are appreciated.


I turned yesterday into a cooking day!  There are some things that I need to get out of our “condo” before we start on our Dr Phil 20/20 journey.  I would just take them and donate them all, but with money being tight – I cant do that!  We have to make sure son has something to eat.  Next payday comes in the middle of the month, so that’s when we will replenish our pantry with the 20/20 approved foods.

I bet you are asking, “What did PCW make this time?”  “What did she use to cook with, the waffle iron or the crockpot…..OR BOTH?”  Well, I had a pineapple cake mix in the pantry, so I decided to make a crockpot cake again.  I prepared the cake mix just as it called for on the box.  I made my parchment “boat” inside the crockpot and placed the batter inside the boat. I then took a small can of pineapple pieces and spread them (minus the juice) on top of the batter.  I placed the top on the crockpot and let it cook.  After an hour, I took the top off and wiped the inside of it down to remove the moisture.  On the second hour of cooking, I removed the moisture again.  I think it was 2.5 of total cooking time.  It did not rise like a cake should, but it wasn’t bad either.  Of course, both of my roomies thought it was the best EVER!!!  As well they should or they wouldn’t get me to cook again. Lol

I also decided that dinner was going to be something straight from the new crockpot cookbook that my friend gave to me for Christmas.  Melissa, this is in your honor!!  I really wanted chicken wings.  I looked through the recipes and found one where I had most items already in my kitchenette.  We made a list of the few things we needed and then headed over to Aldi for the rest.  The wings I picked up were frozen so I had to thaw them at home.  Once thawed, I had to cut the tips and then cut the drumettes from the other part of the wing.  I had to let the crockpot cool before I could cook the wings in it.  The recipe we decided to make was Moroccan Chicken Wings.  Let me just say – they were DELICIOUS!! They were not the best to look at, but they tasted very good!  The absolute best part – we saved money.  If we had went to a “wing house” and ordered them, we would have spent a fortune!! Small fortune, but still much more than we spent making them on our own.

So, what happened for them to be ugly? Lol  ME!!  I completely messed them up.  I put too many in the skillet to brown them before dumping them into the sauce.  The skin did not cook properly because of it.  Then, once I dumped them sauced up into the crockpot, I turned it all the way “on”.  I have done this before.  After an hour, I wasn’t smelling them, so I went to check on them and it seemed like the pot was warm, so I didn’t think anything of it.  I checked again in about an hour and they were still no more cooked than before. WHAT??  Ok, this is the second mistake I made on these wings.  When I turned the crockpot all the way “on”, I didn’t realize that it was on WARM not high.  Well CRUD!!  So I switched it over to high and kept my eye on it. It turned out to be a very late night for eating.  Like 9pm eating.  We usually eat earlier than that, but I had to give them enough time to thoroughly cook.  The recipe says that it would take normally 3-3.5 hours to cook.  Here it is and I have stretched it out to about 5.5 hours. UGH!! We finally ate, and this was the finished version.

I am going to reheat the left overs in a skillet today and give to son.  They were really, really good and it will be something that I make again!!

On another note – OH MY GOSH winter finally showed up!  Ok, well, for some its not cold – but it is to us.  We woke up in our tin can with temps outside of 51.   It rained all day yesterday, so we knew it was going to bring in the cold snap, and it did. Bless our Florida hearts, we are all in sweats, socks and jackets this morning sitting around drinking our coffee.  Even our lil doggie was cold.  His ears were just soooo cold and his little paws too.  I ran some warm water and put down for him to drink.  He didn’t like it too much, but after about a minute of lapping it up, he had a little pep to his step.  Gotta keep my lil fur baby warm!  Actually, I think if we had electric blankets right now, it would be really good.  However, I don’t even want to purchase them because we don’t get enough cold weather to use them enough, and we just don’t have the storage for them.  Today is a high of 63, but it is already feeling really good outside.  They are saying that it is going to be 49 tonight, so we will need to bundle up during bedtime! Lol   OH the trials and tribulations of living in a condo on wheels!! Lol

Resolve to call it goals!

I am going to set out to make a few goals for my family this year.  Some of them will be for me, specifically, and the rest will be for the family.  I say goals because I absolutely hate the term resolutions.  Resolutions, or resolve, is not something I really want to focus on.  I am not trying to resolve anything.  I am trying to make changes!  Some are big and some not so much.  This might even be an ongoing goal list that I change from time to time through the year.  What I think will work, may not work later, or vice-versa.  One thing for sure is that I am growing.  I am growing as a person, a mom and a wife.  I was pushed beyond what I was comfortable with last year as boundaries goes.  This year, I think I still need a little pushing (maybe not as much as last year) so that I can mold into the woman, wife and mother God wants me to be.

So, what are my goals for the new year?

  1. Get a new car. Ok, so not brand new, not even somewhat new – BUT NEW TO ME!!  One that is paid in full and we will owe absolutely no car note!
  2. Get out of debt.
  3. Find land to purchase (and get back in debt for the greater good). Will try to find land that we can put our “condo” on that is out in the country area and doesn’t cost a whole lot. We want to save enough money and build a home . . . . . SLOWLY!!
  4. Eat better.
  5. Exercise more.
  6. Have better health, which will come because we are eating better and exercise more.
  7. New clothes!! I am going to need them if I exercise more and eat better!!  Win-win. lol
  8. Sew more. Yes, I love to sew.  I made the Halloween costume for son for the first few years or so that he went Trick-or-Treating.  I thought store bought costumes were cheesy looking and too expensive.  I thought I could do better on my own, and I did. Yeah, I got skills. Lol
  9. Vacation!! So, with the moneys we are saving from being debt free, I will like to spurge a little and have us go on a vacation.  Will it happen?  Stayed tuned!!
  10. Have more patience. It seems as if I lost it somewhere.  Its like I am standing in my doorway, looking out and yelling, “PAAATTIENCE, COME HOME!!  ITS TIME TO COME BACK!!!!!!!”  I just haven’t had a good handle on it this year, but I guess that is expected with all we have been through.
  11. Try not to let what others do annoy me. Hey, its on them, not me!
  12. Save as much money as I (ok, we) possibly can. I never want to be in the situation again that we were faced with this year.  Most people tell you to save up enough money for at least 3 months worth of bills to carry you through in-case you are let go from your job.  Hubby was furloughed back in March 2015 – 3 months worth of paychecks would not have carried us through until now!  Can we call that type of savings a pipe dream?  Ummm – YEAH!!  As long as we get out of debt and reduce our overhead, we will not be in that situation. I want a nest egg!!

So these are my goals as of right now.  Now I need to print them and tape them to the fridge. Oh snap, I only have packing tape and duct tape.  Wont that just look adorable on my fridge? Lol
